IDA NextGen: Wine Academy - Wine and History

Have you ever wondered what Napoleon drank while he wrote to Josephine? Or how the first wines were made in the Caucasus and North Africa, thousands of years before anyone talked about terroir?

Description:

This session of the IDA NextGen Wine Academy will be a trip through time and geography. We’ll look at what wine was like in its first 6,000 years, and how it developed once we took control of it in more modern times. Along the way you’ll taste wines that show how styles, fashions and technology have shaped what ends up in your glass.

Guiding us is sommelier Rasmus Dalgaard. He brings hands-on experience from 1-star Michelin restaurants and runs his own import company, Fræk Vin. He’ll tell the story in an informal, approachable way, with a glass in hand all the way through.
Whether you’re a history buff or just want to taste something beyond what the supermarket offers, this session will be both heavy and quite fun.

What you’ll learn:

  • How winemaking fashions have swung, and why “natural” isn’t actually new
  • The last 6,000 years of winemaking, in just two hours
  • How to spot a classic in a glass, blind

The IDA NextGen Wine Academy also covers:

  • How do you actually taste wine? (28th of October 2026)
  • Grapes & wine styles worth knowing (Upcoming)
  • How wine is made (Upcoming)
  • Wine & food pairing (Upcoming)

What is included:

  • Guided Masterclass: A session on wine history led by a professional sommelier.
  • Wine Tasting: We will taste approx. 6-7 different wines.

Networking:
IDA NextGen is all about networking! While there is no forced "speed-dating," we encourage everyone to be open, curious, and inclusive. This is a great opportunity to meet new people across disciplines, including those outside your immediate circle and international non-Danish speakers (the session is hosted in English).
